PROPERTIES AND FORMULATIONS
   Soluble in water and acetum but not in oil.
   Produces purple-red to red shade at less than pH 6 and purple shade at greater than pH 7.
   Excellent stability to heat and light, especially in acid condition. It is easily influenced by iron, tin and copper ions etc.
   Applicable to wine, beverage, juice, jam, ice-cream, pastry and so on.
