China is the world's largest pork producer and consumer, currently accounts for only 2.3 per cent of Danish pig exports that last year reached 1.89 million tonnes. But it is seen as a market with significant potential, as the world's largest population becomes wealthier and spends more on meat. Last year, per capita pork consumption reached 33 kilograms, higher than the world average. The nature of Chinese pig production and the low degree of China’s integration with world agricultural markets has hidden this fact from many. But that is destined to change in the new century. China's pork is produced under conditions that vary considerably, both within and between regions. Market conditions favorable to one segment of the swine economy may hurt another - a serendipitous hedging function.
