Nootkatone is a sesquiterpene ketone isolated from grapefruit peel oil and Alaskan yellow cedar oil. It is colorless or light yellow oily liquid, pure product melting point is 35~36ºC, +185°~+186°. Citrus ketone has a persistent and strong citrus-like aroma, typical of grapefruit at lower dilutions. 

Nootkatone is a natural organic compound and is the most important and expensive aromatic of grapefruit. It is a sesquiterpene and a ketone. Mainly used for the preparation of various citrus flavor.
