Product Description

Product Description

Potassium Sorbate (CAS No. 24634-61-5) is a potassium salt of sorbic acid, a naturally derived unsaturated fatty acid first isolated from mountain ash berries (Sorbus aucuparia). It is a white to light yellow crystalline powder, highly water-soluble (58.2 g/100 mL at 20°C), and stable under recommended storage conditions (cool, dry, 15°C or below).
Chemical Formula: C6H7KO2
Molecular Weight: 150.22 g/mol
Purity: Typically ≥98.0% (pharmaceutical grade) to ≥99.0% (technical grade).
Safety: Generally Recognized as Safe (GRAS) by the FDA and approved by JECFA with an ADI of 0-25 mg/kg body weight.
Function: Inhibits mold, yeast, and aerobic bacteria by disrupting microbial enzyme systems, extending product shelf life.
