Customized vacuum fryer for fruits and vegetables chips
 
I.Production introduction:

(1) Vacuum low temperature frying dehydration and drying principle:
Fruit and vegetable crisps are made of fresh fruits and vegetables as the main raw materials, edible vegetable oil as the hot medium, and vacuum low-temperature frying (VF vacuum Fryer) and other advanced technologies can quickly dehydrate and dry in a very short time to obtain fruits and vegetables with low water content. They have low oil content, crisp but not greasy. They preserve the original shape, color, fragrance and taste of fruits and vegetables, and are rich in vitamins, minerals, fibers and other nutrients, with low sugar, salt, fat and heat.The body of this machine is made of SUS 304 stainless steel.


(2)Advantages of vacuum fryer:
1.Much lower frying temperatures (approx. 90 to 120ºC in practical operation, depending on the product) to maintain flavours and colors
2.Processing products with higher reducing sugar levels in comparison with normal atmospheric conditions
3.Minimizing of health harmful thermal reaction products, such as acrylamide
4.Texture can truly be influenced
5.Evaporation rate will be faster
6.Pressure as a new parameter of control next to retention time and temperature
7.More gentle oil handling
8.Lower steam pressure for frying oil heating systems required than in atmospheric fryers (approx. 8 bar)
9.No frying vapor emission

(3)Vacuum frying process:
Raw materials → screening → cleaning → slicing (cutting) → green (color protection) → draining → freezing → thawing → soaking (vacuum impregnation) → cleaning → draining → vacuum frying → vacuum degreasing → seasoning → product packaging → warehousing.



(4)Applicable food range of vacuum low temperature frying:

1, fruits: apples, bananas, kiwi fruit, pineapple, winter jujube, strawberry, jackfruit and so on.

2. Vegetables: such as carrot, radish, sweet potato, pumpkin, garlic, onion, mushroom, winter melon, okra, etc.

3. Meat: such as beef, fillet, shrimp, octopus, etc.
