The drying process in dry yeast's manufacture reduces moisture content, giving it a longer shelf life than fresh yeast while retaining optimum activity. When activated, it provides ultimate baking activity in all yeast dough- low sugar to highly sweetened breads. The finished product will have the particular flavor,texture and consistency associated with a yeast-leavened product.
(1) Just mixed the active instant dry yeast with flour, sugar, salt, warm water, knead the dough until it smooth and left the dough to rise to double in size.
(2)Then shape the dough into loaves and baking. Be careful for the warm water temperature should be kept at 35° -38° C. To hot the water, the yeast cell will die and dough cannot rise.
(3) A longer rising time gives a better flavor, but the yeast can fail to raise the bread in the final stages if it is left for too long initially. It may take 40-60 minutes (the fermentation time is changeable at different indoor temperature). When small holes appear in the dough, the dough can be molded. 5-10 minutes later, put the shaped dough into oven.
