What Is Wheat Glute?
Wheat gluten is a kind of plant protein mainly existing in wheat , the scientific name of wheat gluten, it is an important protein in wheat crops. Wheat gluten is mainly composed of melolin and gluten, grayish white powder, swelling and elastic with water, but insoluble in water. It can be dissolved in dilute acid or dilute base and is the basis for making gluten .
Wheat gluten can be divided into two categories according to its molecular weight: high molecular weight gluten (HMW-GS) and low molecular weight gluten (LMW-GS). High molecular weight gluten is the main component of the gluten network and forms the backbone of the gluten network, while low molecular weight gluten is connected with high molecular weight gluten to form a chain structure with fine branches .
