After vacuum freeze - drying, the physical, chemical, and biological properties of the material remain largely unchanged. The volatile and nutritious components in the material, which are prone to denaturation in warm conditions, have minimal loss. When the material is freeze - dried, it becomes porous and its volume is approximately the same as before drying. Hence, the processed material can be quickly rehydrated due to its large contact area and can be stored for an extended period in a sealed container.
