Alpha-Cyclodextrin is produced by the action of cyclodextrin glucosyltransferase (CGTase, EC 2.4.1.19) on hydrolysed starch syrups at neutral pH (6.0-7.0) and moderate temperature (35-40°C).
The annular (or doughnut-shaped) structure of alpha-cyclodextrin provides a hydrophobic cavity that allows formation of inclusion complexes with a variety of non-polar organic molecules of appropriate size.
The hydrophilic nature of the outer surface of the cyclic structure makes alpha-cyclodextrin water-soluble.
Application:
1). Cyclodextrins are ideal host molecules similar to enzymes discovered so far and have enzyme-modeling properties of their own. Therefore, cyclodextrins have received great attention and are widely used in the fields of catalysis, separation, food as well as pharmaceuticals.
2). Since the inner cavity size of α-CD is smaller than that of β-CD, it is more suitable for encapsulating small molecules of the encapsulated species, and for applications requiring higher CD solubility
3). It is suitable for high-grade flavor, fragrance, cosmetics and pharmaceutical industry.
