Pentadin is a low-calorie sweetener and flavor modifier. The protein is often used primarily for its flavour-modifying properties and not exclusively as a sweetener.
Pentadin is a sweet protein extracted from the fruit of the African tropical plant Pentadiplandra brazzeana Baillon. The molecular weight is 12.0 KDa and the sweetness index is about 500. It is extracted from the same plant as Brazzein protein, but the difference is that pentadin is extracted from the fruit after heat drying, while Brazzein sweet protein is extracted from fresh fruit. In addition, the sweetness of pentadin disappears quickly.
