| Transglutaminase (TGase) is a thiolase that promotes intramolecular cross-linking, intermolecular cross-linking, and cross-linking between proteins and amino acids. TGase can catalyze the formation of glutamine residues in proteins γ- Amide and lysine groups ε- Amide transfer reaction between amino groups, forming ε- ( γ- The heteropeptide bond between glutamine and lysine alters the functional properties of proteins.
