Bright blue powder, soluble in water, insoluble in grease. Phycocyanine is a protein-binding pigment. PH: 3-4. Unstable to heat. PH: 5-8 condition is relatively stable. PH < 4.2 Precipitation occurs .
A strong base can decolorize it.
