Gelatin is colorless or slightly yellow, transparent, brittle, odorless, tasteless particle, flakes, or powder; soluble in hot water, glycerol, and acetic acid; and insoluble in organic solvents.

Gelatin is extracted from collagen and is a high molecular weight protein composed of 18 amino acids. Bovine hide , bones and fish scales are normally used for the production of the gelatin.
Gelatin can absorb 5-10 times of water and if heated,it enters a sol state. Upon cooling, it enters a gel state.
Because of its special properties, gelatin is used in making pharmaceutical capsules, jelly,industrial adhesives. Also gelatin is widely used in other applications.

Gelatin has no fixed structure and relative molecular weight from animal skin, bone, muscle membrane, muscle charm connective tissue such as the degradation of collagen to become white or pale yellow, translucent, microstrip luster of wafer or powder;Is a colorless, odorless, volatile, transparent hard amorphous material, soluble in hot water, insoluble in cold water, but can slow will swell to soften, gelatin absorbable is equal to the weight of 5 to 10 times of water.
Gelatin is one of the important natural biological macromolecule material, has been widely used in food, medicine and chemical industry .
