present in green tea leaves, which can block the binding of glutamate to glutamate
receptors in the brain and has neuroprotective and antioxidant activities.

L-theanine is used to make seasonings. L-theanine is mainly used in green tea and as
a nutritional enhancer.
Preparation of L-theanine
Natural products are more commonly found in high-quality green tea (up to 2.2%).
Pyrrolidone carboxylic acid is prepared by heating L-glutamic acid under high pressure.
Make it into copper salt, then add anhydrous ethylamine, and heat it under high pressure
to obtain L-theanine.
