Its main compositions are anthocyanins and flavones. This product is red purple liquid or powder which is easily dissolved in water and water-alcohol solutions. With the increase of pH values, the color is changing gradually: from red to red purple, later purple-green, and finally green. It has good heat and light resistance and strong anti-oxidation ability. It is suitable for integrated alcoholic beverages, carbonic acid drinks, juice drinks, jelly, preserved fruit, candy, pastry and so on.
