- Food Industry
- Leavening: Reacts with sodium bicarbonate to produce gas, making baked goods porous. For example, it can increase the volume of cakes and make their texture finer.
- Buffering: Regulates the pH value of food, stabilizes the acid-base environment. Prevents flavor changes and microbial growth in beverages, and improves the water-holding capacity and tenderness of meat.
- Emulsifying: Promotes the uniform dispersion of oil and water, prevents oil-water separation in products like salad dressing, extends the shelf life, and makes the texture more uniform.
- Chelating: Complexes with metal ions and reduces their activity. Prevents browning in fruits and vegetables and delays the oxidation of oils.
