Alkaline protease (also named alcalase protease) is a protein enzyme, it comes from Bacillus licheniformis after its fermentation and refinement, it mainly composed by Bacillus licheniformis protease.
1. In the food industry: as a starch modifier, used in the production of bread, cakes and sausages to improve flavor and quality
