Sodium benzoate, an organic compound, is the sodium salt of benzoic acid. Sodium benzoate is white granule or crystalline powder, odorless or slightly benzoin odor, easily soluble in water, aqueous solution is slightly alkaline, slightly soluble in ethanol, soluble in glycerol, exposed in the air will absorb moisture. Reacting with acid will precipitate benzoic acid, reacting with carbonate will generate bubbles, and can also react with alkali and vitamin C. The industrial methods for preparing sodium benzoate include benzoic acid process. Sodium benzoate is commonly used as a preservative, corrosion inhibitor, etc., and is widely used in water treatment, food, medicine and other fields.
In addition, benzoic acid and its salts are broad-spectrum antimicrobial agents, but their antimicrobial effectiveness depends on the pH of the food. With the increase of acidity of the medium, its bactericidal and bacteriostatic effect is enhanced, while in the alkaline medium, it loses bactericidal and bacteriostatic effect. The optimal pH value of its anticorrosion is 2.5~4.0
