Purpose: Biochemical research. Under the presence of coenzone I, it catalyzes the dehydrogenation reaction of certain primary or secondary alcohols, aldehydes, and ketones including ethanol, with a higher dehydrogenation rate of n-butanal, cinnamaldehyde, and benzaldehyde than a-c-e-t-a-l-d-e-h-y-d-e. The removed hydrogen is accepted by NAD, making it a reduced coenzyme I. In the process of yeast fermentation to produce alcohol, the final reaction is catalyzed by this enzyme, which reduces a-c-e-t-a-l-d-e-h-y-d-e to ethanol.
