What is Soy Lecithin?
The largest industrial production source of lecithin is the by-product of soybean oil production process, which has properties such as interfacial adsorption, formation of micelles, emulsification, formation of liquid crystals and liposomes. It is easy to form W/O type emulsions in acidic environments and O/W type emulsions in alkaline environments.
