What is Sodium alginate?
Sodium alginate, mainly composed of sodium salts of alginate, is a mixture of glucuronic acid. It is a gum extracted from brown seaweed such as kelp. It can improve the properties and structure of food, and its functions include coagulation, thickening, emulsification, suspension, stability, and prevention of food drying when added to food. It is an excellent additive.
