Brazzein is a sweet protein isolated and purified from the fruit of Pentadiplandra Brazzeana Baillon, a wild plant in West Africa. Brazzein is a single chain polypeptide consisting of 54 amino acid residues, containing 8 cysteine residues and forming 4 pairs of intramolecular disulfide bonds. Brazzein has a relative molecular weight of 6500, an isoelectric point of 5, and a sweetness that is 2000 times that of sucrose of equal mass. Compared with other sweet proteins, Brazzein has the smallest molecular weight, the best water solubility, and the aqueous solution still maintains its sweet taste after 4 hours of heat treatment at 80 ºC, with good thermal and pH stability
