Leuconostoc mesenteroides subsp. mesenteroides is a lactic acid bacterial group that is a key component of kimchi fermentation. It is also closely related to lactobacilli and is used in many fermented milk products and cheeses as a flavor-producing starter or adjunct culture.

It produces large glucose polymers during sucrose fermentation
