Monk fruit is one of the first precious medicinal herbs for both medicine and food announced by the Ministry of Health. Compared with sucrose, the sweetness of Monk Fruit is 200 times higher than that of sucrose. When heated in neutral aqueous solution or in air for a long time, the Mogrosides is not destroyed and has good thermal stability. Monk Fruit Mogroside V is stable in acidic environment.
Erythritol, with a taste of refreshing sweet, not easy to absorption moisture , has good stability at high temperature and in a wide PH range , there is a mild sense of coolness when it was dissolved in the mouth, suitable for a variety of food.
