Product Description
Potassium sorbate is made by neutralizing sorbic acid and potassium hydroxide, and has all the basic properties of sorbic acid except solubility. Potassium sorbate is white or off-white granule or powder, easy to absorb moisture and very unstable in the air, easy to oxidize and become brown, but more stable to light and heat, will dissolve and decompose at about 270 ºC, 1% aqueous solution of pH value is 7 ~ 8.
The antiseptic mechanism of potassium sorbate is the same as that of sorbic acid, i.e. it combines with sulfhydryl group of microbial enzyme system, thus destroying many enzyme systems and thus realizing the purpose of inhibiting microbial reproduction. The inhibitory effect of the development of the effect is stronger than that of its sterilization, so as to achieve the purpose of prolonging the preservation time of the food, and at the same time, to maintain the original flavor of the food.
