According to the degree of hydrolysis (DE), it can be categorized into low conversion syrup, medium conversion syrup, high conversion syrup and ultra-high conversion syrup. According to the different types of glycolytic enzymes used, they can be classified as low DE syrup, glucose syrup and maltose syrup.
